The most critical reason for checking oil before starting the engine is mechanical protection. Engine oil lubricates moving parts including bearings, pistons, and the crankshaft. If oil is dangerously low, starting the engine can cause metal-on-metal contact within seconds, scoring bearings and potentially destroying the engine. While oil does drain back to the pan when an engine sits and gives a more accurate reading cold, that is a secondary benefit.
